For 10 day workshops, your host site, The Ridge, will offer two primary dining packages that can be tweaked to cater to practically any budget or palate. Drinking water will be available at all times at no charge. A canteen/pantry of snacks, fruit, bottled and canned drinks available for individual purchase at reasonable prices. Most meals will be cooked and prepared on-site and can be modified, within reason, to accommodate guest requests. The nearest grocery store and area for restaurants is approximately 15 minutes drive from the site. Contact us for meal options for day events or shorter workshops.

The Enlightened One– this meal plan will follow the most recent nutritional research (placebo-controlled, double-blind, randomized, large sample) and offer mostly whole-food, plant-based dishes, with no animal or dairy products. Important – this plan will likely offer MORE protein and energy than the Omnivore plan and will lead to improved health with increased consumption. Elephants and gorillas eat only plants!
i. Breakfast – a buffet selection of nuts, berries, dried and fresh fruits, granola and dairy-free “creams/yogurts”. Oatmeal, whole-grain breads, almond butter, honey and a wide array of spices. Vegetables, frozen fruit, flaxseed, amla powder and turmeric for making power smoothies. Vitamins B12 and D supplements will be available. Almond milk, soy milk, and blended fruit will be offered along with coffee and tea.
ii. Lunch – a choice of whole-grain wraps, breads and power grains with kale, spinach and a wide array of beans, hummus, seitan creations, cruciferous and leafy greens will be offered along with other types of vegetables such as peppers, onions, and mushrooms. Choices and options to rotate daily to provide variety.
iii. Dinner – A selection of at least two meal options nightly along a theme or ethnic origin. Examples include “Asian Fusion” with tofu or edamame stir fry, ginger dressing salads, miso soup, and fried brown rice/quinoa. A theme may be “Mardi Gras” with Spicy Red Beans and Rice, gumbo, etouffee, and some zydeco music!

The Omnivore – this meal plan will be the typical “American” diet high in animal protein, dairy, salt, sugar, fat and processed carbohydrates with fewer fruits and vegetables. Important : diners are advised that this meal plan is shown to be a leading cause of heart attack, stroke, diabetes, and cancer.
i. Breakfast – a buffet selection of sliced and cured meats, cheeses, sweet muffins and pastries, breads, yogurt, cream cheese, butter, eggs, peanut butter, fruit, berries, honey, coffee, orange juice, milk, and tea.
ii. Lunch – a choice of meat and cheese sandwich, pasta/potato salad, fruit, and cookie. Choices and options to rotate daily to provide variety.
iii. Dinner – A selection of at least two meat options, several starches and cooked vegetables nightly along a theme or ethnic origin. Examples include “Mexican” with steak and chicken tacos with cheese, sour crème, burritos, rice, ranchero beans, chips, guacamole, and salad. A theme may be “New Year’s Eve” with ham, black-eyed peas, turnip greens, cornbread, macaroni and cheese, and a champagne toast.

Vegan Sous Chef and KP Option –(Very limited availability and will sell out FAST!) for those on a budget, we will offer a select amount of spots the option to help cook or clean every meal. You will learn from an experienced cook and will work hard to earn a lower price on your meal plan. Our Sous Chef and KP (Kitchen Patrol) team will work their butts off, probably get yelled at, but will have a blast! These brave individuals will get a discount on their meal plan.
